When I spend time on pinterest I get inspired to be really crafty (yet hardly have time to be crafty), want to get super duper organized (that doesn't happen either), plan my dream house, and redecorate my apt.  Here are the top ten I have found this week :)

Back in Action

So the weeks have flown by...seriously where did May go?????  With the fast pace I have gotten away from blogging, but this is my mark back into it.  So May has been a busy month with classes ending, trip to NYC, busy work schedule and most recently a trip to North Carolina.

My parents moved to NC when I graduated high school 7 years ago!!!!!!!  That is crazy!!!  I enjoy NC, def a difference from CT but a good different.  I lived in NC for about two years after I graduated from my undergrad and this trip made me miss living in NC a little bit.  It had been a whole year since I was in NC and it made me realize how I do miss living so close to my parents and sisters.  Not that I don't love being close to my friends and family here and going to grad school at UCONN but it was bittersweet to leave this time.  My sister is about to be 13 years old and this time when I saw her I noticed a big difference in how old she is looking now.  She is not a little girl anymore...The trip flew by and I wish I had tons more days there but in the end you always have to come back to reality.  I had a lot of fun visiting with everyone.  I am going to try and make it back down again before the summer is over.

While in NC I got a lot of photographing done, taking pictures of my sister, my family's dog, and my sister's softball team, and my friends cupcakes from her cupcake business.  It was lots of fun and strengthened my love of photography.

 all grown up :)

Daisy....seriously the cutest puppy ever!!!  I had so much fun playing with her

 Amanda loves softball...Pitching strikes

Doesnt this just look yummy!!

NYC

This past weekend I went to NYC to celebrate my roommates birthday.  Every time I go there it amazes me how different NYC is from where I live.  The city is always bustling with people from all walks of life and from all over the country, or the world for that matter.  The energy is so high and there is so much going on.  The opportunities feel endless in the city.  I do not think I would ever want to live in NYC but it is very nice to visit. Coming back home to my apt in CT made me feel like my life is so boring.  Haha I love my life but the city is night and day compared to my life.

Something that boggles my mind every time I am in the city is how people are able to drive through the city with ease.  City driving is ooc (out of control)!!!!  Taxis zooming in and out and everyone else just going along like they all have been doing this for years.  My friend Ryan drove through the city and I was like are you nervous at all driving and he replied nope!  I swear these people must go to a special driving school or something haha.

While in the city we went out for sushi which let me tell you was sooooo good...and then went to a cool bar called Joshua Tree where they play old 80s 90s songs, soo fun!!  We were also out until 4am and people were still going strong, city that never sleeps.  It was good to know someone who lives in the city (one of Ryan's friends) because we were able to spend the night.  Sunday we got up and went to the upper west side and had breakfast.  Sooo good, I had a spinach and goat cheese omelet and a coffee.  Amazing!!!  We then went for a walk through Central Park which is such a beautiful place.  It is crazy to think that smack dab in the middle of the huge city with tall buildings encasing it is this beautiful huge peaceful park.  People running, biking, playing, strolling, etc.  When we were almost done with our walk we saw the most interesting thing....people playing quidditch in the park.  Yes quidditch (the game from Harry Potter) and yes they did have brooms in between their legs....no flying but they had their brooms.  It was very interesting to say the least, there was even a kids game going on and one kid had on a cloak.  Def something you wouldn't see everywhere but it was fun to watch!!

I really wanted to have a celebrity sighting while in NYC but didnt happen :/ they hid well.

Next Food Network Star??? haha

So when it comes to the topic of cooking it is usually a hit or miss with me.  I like to cook and bake sometimes, especially when I find a new recipe to try.  However, I do not cook a lot (well besides the microwave and quick meals) because honestly it is such a long process just cooking for one.  I did find a new recipe (thanks to pinterest) and I must say I am pretty impressed with it...super delicious too.

Mexican Stuffed Peppers :)
It was really good and super easy to make. Inside the pepper is just brown rice, salsa, black beans and cheese on top.  The recipe did say to use ground turkey and corn but I left those out.  It was a good way to have Mexican food but in a new way!  I was excited when I got to have the other half of the pepper for lunch the next day too!!!

This past week was my roommates birthday and she has a true love of peanut butter and chocolate so I wanted to make something with these ingredients and ended up making chocolate peanut butter cupcakes (ahh to die for)

They even had a peanut butter surprise in the middle too!!!

Needless to say she loved the cupcakes and the recipe was also from pinterest (don't know what i would do without it)

Cant wait to see what I cook up next.... back to searching for recipes on pinterest :)
